Ingredients:
Whisk first 5 ingredients together in a small bowl. Chop bok choy leaves and place at one end of pan. On the other side, chop bok choy stems and arrange as single layer. Place Salmon on top of leafy greens. Pour half of sauce over salmon fillets and drizzle the rest over the bok choy stems. Broil for 5 minutes, stir stems, continue broiling for an additional 4 minutes. Top each fillet with 1 tbsp green onions.

Sorry for such a late Kentucky Derby related post but I’m still excited about my big winnings and must share my strategies for betting on horse races, which if you’re like me, you know absolutely nothing about. I placed $10 on the winning horse, strictly chosen by who had the coolest name, and won $150 on the 15-1 odds! The only thing I won’t be having another of anytime soon is a mint julep. Holy whiskey on the rocks….
As for the outfit, went all out on the stripe and print mixing. I seriously have no rules about how to rock this other than with confidence, a pair of chucks and a seriously oversized, beat-up belt. The trick to the belt is to buy up a few sizes and punch a few more holes into (thank you step-dad) so you can wrap like the photo above (just make sure you go under first).

Hmm, let’s see. It’s been a whopping 5 years since I last colored my hair and for some reason I have the itch to add some soft highlights. Maybe I’m scarred by my blonde highlighting days that I could not financially keep up with, causing some very ombre hair lightyears before the trend.
